We ask Gonring about this intensive research process, including what it’s like trying to visit 100-plus restaurants within tight time frames, often as short as three weeks. Gonring also shares his insight into the trends he’s seeing now, including the resurgence of pita pockets, Korean corn dogs, global crepe-like variations and beyond.
