We’re back with our newest episode of So You Want to Run a Restaurant. In this week’s podcast, we chat with Gordon Food Service corporate consulting chef Nick Gonring.
Gonring’s job largely focuses on drilling into research to help Gordon Food Service stand out among competitors and better serve its customers. And a big component of that is tracking trends nationwide, requiring Gonring to check out countless restaurants and talk to numerous chefs.
We ask Gonring about this intensive research process, including what it’s like trying to visit 100-plus restaurants within tight time frames, often as short as three weeks. Gonring also shares his insight into the trends he’s seeing now, including the resurgence of pita pockets, Korean corn dogs, global crepe-like variations and beyond. Plus, he shares what he sees as the key components for driving success and demand in a competitive restaurant space.
